Weeknight Curry Chicken

Ingredients

2 tbsp. butter

2 tbsp. flour

2 Tbsp. curry powder

1 can (14.5 oz.) Hill Country Fare chicken broth

1 tub (4 oz.) Plain yogurt

6 pieces H-E-B fully cooked® herb roasted chicken thighs

1/4 cup Chopped peanuts

1/4 cup Coconut flakes

Directions


In a large skillet over medium high heat, melt butter with flour and currypowder, stir to
combine.
Wisk in chicken broth and simmer to thicken.
Gently fold in yougurt. Season with salt and pepper to taste.
Place chicken in sauce, cover with a lid and simmer for 15 minutes.
Once chicken is hot, sprinkle with peanuts and coconut.
