Stir Fry Chicken & Vegetables
2 cups H-E-B Instant Long Grain Rice
1 pkg. (12 oz.) H-E-B Fully Cooked® Chicken for stir fry or thai style chicken, heated
1 bag (16 oz.) frozen H-E-B Steamable Zesty Zen Blend
2 Tbsp. Hill Country Fare Canola Oil
1 Tbsp. Sesame oil
1/2 cup chopped H-E-B Snax Spicy Peanuts (optional)
Combine 2 cups of water and instant long grain rice in a saucepan. Heat over high heat and
bring to a boil. Season to taste with salt and pepper. Cover, reduce heat to low and cook
for 5 minutes.
Meanwhile, heat the H-E-B Fully Cooked® Stir-Fry Chicken or Thai Style Chicken accordi
ng to package directions and set aside. Heat the H-E-B Steamable ZestyZen Blend according
to package directions and set aside.
Heat a large skillet or wok over high heatfor 4 minutes. Add the oils and heat 30 seconds.
Add the heated chicken and stir-fry for 2 minutes. Add the heated H-E-B Zesty Zen Blend a
nd stir-fry for 3 minutes over high heat.
Spread the cooked rice on a large platterand top with the stir-fry chicken and vegetable b
lend. Top with the chopped spicy peanuts if desired.
