Pork Tenderloin with Mushroom Risotto
20 to 50 minutes
1 H-E-B italian seasoned pork tenderloin
1 Tbsp. olive oil
1 cup H-E-B arborio imported rice
3 cups chicken broth
1 can Campbell's® cream of mushroom soup with roasted garlic'
Bake tenderloin at 350F for 20 minutes.
In a 1 quart saucepan, add olive oil and rice. Sautèacute; for 10 minutes over medium high
Add chicken broth in 1/2 cup portions and cook until 2 cups have been absorbed. Add soup a
nd last cup of broth. Cover and simmer on low until pork is done
