Pork & Hominy With Corn Dumplings
1 tub (12 oz.) H-E-B Fully Cooked® Carne de Puerco, Seasoned Pork with Juices
1 10 ounce can diced tomatoes with green chilies
1 16 ounce can yellow hominy
1 2.25 ounce can sliced black olives
1 colby jack cheese
1 11.5 ounce tube refrigerated Pillsbury Cornbread Twists
* chopped cilantro or sliced green onions tops, optional garnish
Heat oven to 400 degrees.
Meanwhile, heat pork in microwave or on stovetop according to package directions; stir and
break up pork cubes with edge of spoon. Drain hominy, tomatoes and olives; toss with pork
. Spread mixture evenly in a 9-inch round baking dish or pie pan; sprinkle with cheese.
Open tube of cornbread twists, but do not unroll dough. Separate dough at perforations int
o 8 round, pinwheel-style pieces. Place over top of casserole, 7 in a circular pattern and
1 in the center.
Bake casserole 5 to 8 minutes or until tops of cornbread just begin to brown; turn cornbre
ad over and bake casserole 15 minutes longer. Garnish with chopped cilantro or sliced gree
n onion tops, if desired.
