Chicken & Black Bean Skillet

1 large onion, chopped

1 Tbsp. H-E-B Butter

1 1/4 cups chicken broth

1 cup salsa, hot or mild

1 cup uncooked rice

1/8 teaspoon garlic powder

4 boneless chicken breasts

1 can (15 oz.) black beans, rinsed

3/4 cup shredded cheddar cheese


Sauté onion in butter. Add broth and salsa and bring to a boil. Stir in rice and ga
rlic powder. Place chicken over rice, cover and simmer for 10 minutes. Turn chicken and c
ook for 10 to 15 minutes more.
Remove from heat,add drained black beans, sprinkle with cheese,cover and let stand 5 minut
es to melt cheese.
