Asian Pork with Mushroom Sauce

1 pound pork sirloin chops, cut 3/8-inch thick

4 teaspoons Dragon Rub Asian seasoning

2 tablespoons butter

4 ounces shiitake mushrooms

4 green onions with tops, chopped

1/2 cup dry sherry

3/4 cup chicken broth

1 teaspoon cornstarch


Season pork on both sides with Asian seasoning. Set aside.
Remove and discard stems from mushrooms. Chop mushrooms coarsely. Chop green onions, inclu
ding tops.
Heat a large, non-stick skillet over medium heat 2 minutes. Cook pork 2 to 3 minutes per s
ide. Remove chops to a plate; cover to keep warm.
Melt butter in skillet; sauté mushrooms and onions in butter 3 to 5 minutes until t
ender. Add sherry to skillet; boil 1 to 2 minutes or until almost evaporated.
Dissolve cornstarch in broth. Pour over mushrooms. Return pork to skillet; simmer in sauce
, turning, about 1 minute to heat through. Serve immediately.
