Triple Cranberry Chocolate Cake
1/3 cup Hill Country Fare Vegetable Oil
3 large eggs, lightly beaten
1 (18.25 ounces) box Betty Crocker Devil's® Food Cake Mix'
1 1/4 cup Harvest Moon Triple Cranberry Sauce
1 cup H-E-B Cranberry Juice Cocktail
1 container Betty Crocker Whipped Cream Cheese or Chocolate Frosting
Heat oven to 350 degrees F. Heavily spray two 8-inch cake pans with nonstick cooking spray
or greaase with softened margarine and dust with 1 tablespoon flour; shake out excess; se
t pans aside.
Combine cake mix, eggs, vegetable oil, 3/4 cup of Harvest Moon Triple Cranberry Sauce and
cranberry juice cocktail in a large mixing bowl. Mix for 1 minute on low speed with an ele
ctric mixer and scrape down the sides of the bowl. Divide cake batter evenly into two prep
ared cake pans. Bake on center oven rack for 35 minutes or until cake is done. Cool cakes
completely in pans on cake rack before removing from pans.
Combine remaining 1/2 cup cranberry sauce with cream cheese or chocolate frosting and beat
with electric mixer on low speed for 15 seconds. Place first cake round on a cake plate a
nd frost cake on top and sides. Place second layer on top of the first layer and frost rem
aining sides and top of cake.
