Strawberry Yogurt Cake - Lite Version
1 (9 ounce) pouch Hill Country Fare White Cake Mix
2 H-E-B Eggs, whites only
1/4 teaspoon almond extract
2 (6 ounce) containers H-E-B Light Strawberry Yogurt
Heat oven to 350 degrees F. Spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray. D
ust loaf pan with 1 tablespoon flour and set aside.
Combine cake mix, egg whites (discard egg yolks), almond extract, and 1 container light yo
gurt in a mixing bowl. Mix batter with an electric mixer on medium speed for 2 minutes. Po
ur cake batter in prepared loaf pan.
Bake on center oven rack for 10 to 15 minutes in pan. Run knife around side of pan before
removing. Allow cake to cool 10 minutes before removing from loaf pan.
Slice cake and serve each slice with 2 tablespoons light yogurt
