Reduced-Sugar No-Bake Pumpkin Pie
1 (9-inch) frozen Hill Country Fare Frozen Pie Crust
1 envelope Hill Country Fare Unflavored Gelatin
1 cup H-E-B Fat Free Sour Cream
1/4 teaspoon each: Central Market™ Organics Ground Cinnamon, Ginger, and Nutmeg
1 cup Hill Country Fare 0 Calorie Sweetener Sucralose (Splenda)
1 can (15 oz.) Hill Country Fare Solid Pack Pumpkin
Bake piecrust according to package directions and cool.
Pour 1/2 cup cold water into bowl. Sprinkle unflavored gelatin into water and stir. Micr-w
ave on high for 1 minute.
Stir sour cream, spices, and Splenda into dissolved gelatin. Stir pumpkin into mixture and
place bowl over another bowl filled with ice cubes.
Continue stirring pumpkin mixture until it begins to thicken (about 10 minutes). Immediate
ly pour mixture into baked crust.
Cover pie with plastic wrap and chill for 30 minutes or until firm.
