Spray two 12 cup muffin pans with non-stick cooking spray or line with cupcake liners and
set aside.* Prepare the popcorn according to package directions and discard the un-popped
corn kernels. Mix popcorn, dried fruit and mixed nuts in a large bowl and set aside.
Place peanut butter and marshmallows in a large microwave-safe bowl. Heat marshmallow mixt
ure on High power for 2 to 2 1/2 minutes. Carefully remove bowl from microwave and stir ma
rshmallow mixture until smooth.
Immediately, add the popcorn mixture to the marshmallow mixture; stir with spoon to coat.
