5 cups Hill Country Fare All Purpose Biscuit Mix

2 teaspoons Hill Country Fare Baking Powder

3/4 cup H-E-B Unsalted Butter, cut into slices

1 3/4 cups H-E-B Sugar

2 large H-E-B Eggs

2 teaspoons Hill Country Fare Vanilla

1 bottle, each: Wilton Green & Red Sprinkles


Heat oven to 350°F. Set aside 2 ungreased cookie sheets.
Combine all purpose biscuit mix and baking powder in a large mixing bowl and set aside.
Combine the cold butter and sugar in a mixing bowl. Beat the mixture with an electric mixe
r for 2 minutes or until fluffy and light. Add the eggs and vanilla to the butter mixture
and beat for 1 more minute on medium speed. Stir in the flour mixture with a spoon 1/3 at
a time until a stiff dough is formed.
Divide the cookie dough into 2 pieces and keep refrigerated until ready to use. Roll out e
ach dough piece on the back side of the ungreased cookie sheet to 1/4 inch thickness. Pres
s the holiday cookie cutters into the dough so that the cookies are 1-inch apart. Remove t
he excess dough with a knife. Sprinkle the cookies with Wilton Red or Green Sprinkles.
Bake the cookies for 10 minutes rotating the baking sheet halfway throughthe cooking time.
Cool cookies on pans for 5 minutes and then transfer them to a wire rack.
