Bobbing for Apples Cake

3/4 cup dried apples

1 cup apple cider

1 cup applesauce, at room temperature

1 1/2 cups all purpose flour

1 tsp. baking soda

1 tsp. apple pie spice

1/2 tsp. salt

1 large egg, at room temperature slightly beaten

1 stick unsalted butter, melted and slightly cooled

1 tsp. vanilla extract

2/3 cup sugar


Pre-heat oven to 325°F. Spray an 8"x8" pan with non-stick cooking spray and set aside.
Add dried apples and cider to a saucepan and simmer mixture until cider has reduced to alm
ost dry.
Combine apples and applesauce in a food processor and puree until smooth.
Combine flour, baking soda, apple pie spice and salt in a bowl.
In a large bowl, combine egg, butter, vanilla and sugar. Cream together. Once smooth add a
pplesauce mixture.
Mix in dry ingredients with a whisk. Pour batter into prepared pan,and bake for 30 minutes
