1/4 cup granulated sugar

2 tablespoon all-purpose flour

1 1/2 teaspoon ground cinnamon

5 cup sliced, peeled cooking apples

2 1/2 cup all-purpose flour

1 1/2 cup granulated sugar

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 cup cooking oil

4 eggs

1/4 cup orange juice

2 teaspoon vanilla


Grease and lightly flour a 10-inch fluted tube pan.
Set aside.
In a large mixing bowl, combine 1/4 cup sugar, 2 tablespoons flour and cinnamon.
Add apples; toss gently to coat.
Set aside.
In another large mixing bowl, combine 2 1/2 cups flour, 1 1/2 cups sugar, baking powder an
d baking soda.
Add oil, eggs, orange juice and vanilla.
Beat with an electric mixer on low to medium speed for 30 seconds.
Beat on medium speed for 2 minutes.
Pour 1/3 of the batter (about 1 1/2 cups) into the prepared pan.
Top with half of the apple mixture.
Spoon another 1/3 of batter over the apples in pan; top with the remaining apple mixture.
Spoon the remaining batter over apples.
Bake in a 350 degree oven about 1 1/4 hours or till a wooden toothpick inserted near the c
enter comes out clean.
Cool in pan on a wire rack for 15 minutes.
Remove from pan.
Cool completely on wire rack.
Drizzle with powdered sugar icing.
Let cake stand 1 to 2 hours before slicing.
