Spicy Squash Casserole

Ingredients

2 pounds zucchini or yellow squash (about 4 medium), shredded

1 cup bread or cracker crumbs

2 cups (8 oz) shredded jalapeno jack cheese

2 eggs, beaten

1/2 cup chopped onion

Directions


Heat oven to 350 degrees.
Spray a 2-quart casserole dish with non-stick cooking spray.
Cook squash in 2 cups of water over high heat for 5 minutes; drain and return to cooking p
ot.
Add remaining ingredients; stir to combine.
Season to taste with salt and pepper.
Pour mixture into prepared dish.
Bake uncovered for 20 minutes
