Golden Sweet Potato Casserole
1/2 teaspoon ground cinnamon
2 cans (16 of 17 oz) sweet potatoes or yams, drained
1 can (8oz) crushed pineapple
1/3 cup chopped nuts (optional)
25 Hill Country Fare Marshmallows
Heat oven to 350°F. Spray a 1 1/2 quart baking dish with non-stick cooking spray; set
Place all ingredients except marshmallows in a mixing bowl. Beat until fluffy.
Pour sweet potato mixture into prepared baking dish. Bake uncovered for 25 minutes.
Remove from oven and top with marshmallows. Continue baking until marshmallows are puffed
and lightly browned.
