Oatmeal Overnight Waffles

1/2 cup water

1 package dry yeast

2 cups milk, warmed

1/4 cup butter or margarine, melted

1 teaspoon salt

1 teaspoon sugar

1 3/4 cups all purpose flour

1/4 cup whole wheat flour (or white optional)

1/3 cup regular oats

1 egg

1 egg white

1/4 teaspoon baking soda


The night before: Place water and yeast in a large bowl. Allow to dissolve 5 minutes.
Add milk, butter, salt, sugar, flour and oats. Mix until smooth. Cover and allow to stand
The next morning: Beat in eggs and baking soda until well mixed. Batter will be thin.
Bake in waffle iron until golden and crisp.
