Cornbread And Sausage Quiche
6 large eggs beaten
3/4 cup milk
1 1/2 cup grated cheddar or monterey jack cheese
1 (4-ounce) can diced green chilies
2 (7-ounce) packages Swift premium brown n'serve sausage, crumbled
1 (6-ounce) bag Butterball cornbread stuffing
* Pam cooking spray (optional)
* salsa (optional)
* sour cream (optional)
Preheat oven to 425 degrees.
In a medium bowl, whisk together eggs and milk.
Add cheese, chiles and sausage; blend well.
Fold in stuffing; mix well.
Pour mixture into an 11 x 7 x 2-inch baking dish sprayed with cooking spray, cover.
Bake 40 minutes or until eggs are set.
Top with salsa and sour cream if desired.
