Ingredients
1/2 cup margarine (1 stick), softened
1 cup sugar
1 egg
2 cups diced apples
1 1/4 cups flour
1 teaspoon soda
1 cup flaked coconut
1 cup chopped pecans
Directions
Preheat oven to 350 degrees.
Oil and flour a loaf pan.
Mix margarine, sugar and egg.
Add diced apples.
Mix flour, soda, coconut and nuts in a separate bowl.
Add to apple mixture.
Pack well in prepared pan.
(This dough mixture will be rather thick, so pack well).
Bake 1 hour.
Remove and let cool about 10 minutes
