1 lb. medium or large raw shrimp in the shell
1/4 cup dry sherry
1/4 cup water
3 tbsps. soy sauce
2 tbsps. minced fresh ginger
1 tsp. salt
Combine sherry, water, soy sauce, ginger and salt. Stir until smooth. Add shrimp and toss.
Let stand for 30 minutes.
Build a moderate charcoal fire off center in a covered grill. Add your favorite hardwood c
hips. Drain the shrimp and spread them out on aluminum foil opposite the charcoal fire. Cl
ose lid and smoke shrimp for 15 minutes or until shrimp is opaque. Serve hot or cold
