1 bag (16 oz.) H-E-B steamable rice with corn & poblano or spanish rice
1 cup H-E-B shredded mexican or jalapeno jack cheese
2 H-E-B eggs
1 cup Hill Country Fare all purpose baking mix
2 cups Hill Country Fare Canola Oil
1 jar H-E-B salsa picante any flavor
Prepare the H-E-B Steamable Rice according to package directions and cool.
Combine the cooled rice, shredded cheese, eggs and baking mix in a large mixing bowl. Seas
on the mixture with salt and pepper and set aside.
Heat a skillet and oil over medium high heat for 4 minutes to 375F. Form the rice batter i
nto balls, using about 2 Tablespoons for each ball. Drop into the hot oil and press gently
with the back of a spoon to flatten slightly. Fry the rice bites for 1 minute on each sid
euntil golden. Drain the rice bites on paper towels.
Serve the rice bites warm on a platter with a bowl of salsa picante
