Crunchy Fajita Quesadillas
1 package H-E-B Fresher Lasting Chunky Guacamole Kit
1/2 (3 oz.) can Hill Country Fare Fried Onions
1 (8 oz.) package shredded H-E-B Mexican Blend or Jalapeño Jack Cheese
1 (12 oz.) package H-E-B Fully Cooked Beef or Chicken Fajita Strips, chopped
12 Tia Rosa Corn or Flour Tortillas
1 cup H-E-B Fresher Lasting or jar Salsa
Prepare guacamole according to package directions and set aside. Combine onions, shredded
cheese and chopped fajitas in a medium-size bowl; toss and set mixture aside.
Heat a large skillet or griddle over high heat for 3 minutes. Place 2 to 3 tortillas on ho
t skillet and heat for 1 minute. Turn tortilla over and scoop 1/3-cup fajita mixture in th
e center of each tortilla. Fold each tortilla in half and heat for 1 minute. Turn quesadil
la over and heat 1 more minute or until cheese is melted and tortillas are golden brown.
Cut each quesadilla in half and serve with H-E-B Fresher Lasting Guacamole and Salsa
