Cowboy Fajita Quesadillas
20 to 30 minutes
1/2 cup Sliced Green Onions
1 pkg (12 oz.) H-E-B Fully Cooked Chicken OR Beef Fajita Strips
2 cups H-E-B Easy Melt Cheese, cut into 1-inch cubes
1 can (14.5 oz.) Hunt's® Diced Tomatoes & Green Chilies'
1 pkg (10 ct.) H-E-B Flour Tortillas
1 can Pam Original No-Stick Spray
Drain the diced tomatoes and save the liquid. Combine the cheese cubes and diced tomatoes
in a large microwave safe bowl. Cover the bowl with plastic wrap and microwave the cheese
mixture on medium power for 5-6 minutes, stirring once during the cook time. Stir the mixt
ure to combine well.
Heat the fajita strips according to the package directions. Add the fajita strips, liquid
from tomatoes and green onions to the tomato cheese sauce and stir to coat all ingredients
; set mixture aside.
Coat large skillet with non-stick cooking spray and heat over medium-high heat for 2 minut
es. Place 1 tortilla in hot skillet, spread 3/4 cup of fajita cheese mixture over the tort
illa and cook for 1 minute. Top with another tortilla and turn the quesadilla over and coo
k for 1 more minute or until cheese melts and tortillas are golden. Repeat with the remain
ing tortillas and fajita mixture. Cut the quesadillas into 4 wedges and arrange on a platt
er. Serve hot
