1 pound uncooked chorizo or pork sausage
1 cup chopped onion
1 can (8 oz) mushroom stems and pieces, drained and chopped
1 can (10 oz) diced tomatoes with green chilies
1 loaf (2 lbs) pasteurized process cheese spread, cubed
Cook chorizo in a large skillet over medium-high heats (about 4-5 minutes); drain all fat
Using the same skillet, add onion and cook for 2 minutes until onion is tender.
Add mushrooms, tomatoes with green chilies and cheese.
Reduce heat to medium and cook until all ingredients are well blended.
