Bean & Jalapeno Quesadillas

1 can (15 oz.) Hill Country Fare refried beans with jalapeños

1 cup H-E-B frozen chuck wagon corn thawed

1 can (3 oz.) French fried onions

12 H-E-B whole wheat or 7-grain flour tortillas

12 thin Deli slices H-E-B monterey jack or jalapeño jack cheese


Heat oven to 450F. Line two baking sheets with foil and spray with non-stick cooking spray
Combine the refried beans with jalapeƱos, chuck wagon corn and French fried onions in a bo
wl; set mixture aside.
Place 3 tortillas on each sheet pan. Place 1 slice of cheese on each tortilla and spread w
ith 1/3-cup bean mixture. Top with another slice of cheese and a tortilla. Spray the torti
lla top with non-stick cooking spray and bake in oven for 5 to 6 minutes. Remove from oven
, turn quesadillas over and bake another 5 to 6 minutes or until cheese is melted and tort
illas are golden brown.
