2 tsp. olive oil
1 yellow onion, diced
1 red bell pepper, diced
1 lb. lean (97/3) ground beef
1 (15 oz.) can low sodium pinto beans
1 (15 oz) can low sodium corn
1 (5 oz. can) hominy
1 (15 oz. can) H-E-B Fire Roasted Tomatoes
2 c. Central Market Organics Low Sodium Chicken Broth
1 pkg. H-E-B Low Sodium Taco Seasoning
1 pkg. Hidden Valley Ranch Dry Salad Dressing Mix
* Toppings: Chopped Cilantro & Lime Wedges
Place olive oil in a large pot and heat on medium high.
Saute onions and peppers until onions are translucent. Spoon into a sm
all bowl and set aside.
In the same pot cook ground beef until completely browned.
Return cooked peppers and onions to pot and add all remaining ingredie
nts except toppings.
Bring to a simmer and serve immediately.
Top with chopped cilantro and a squeeze of lime.
