3 slices bacon, finely diced
1 c. sweet onion
2 lbs. ground chicken or turkey meat
1/2 jar H-E-B That Green Sauce
1 c. fresh or frozen spinach, finely chopped
1/2 c. carrots, grated or matchstick
1 each tsp. garlic, fresh, chopped & cumin
3/4 c. chicken broth & heavy cream
1 can white beans (Great Northern or Cannellini), rinsed & drained
1/4 c. cilantro,fresh, chopped
Heat a large skillet to a medium - high. Add bacon and fry until fully
cooked and slightly crisp.
Add onion and ground chicken, sautéing until nicely browned and
cooked through, approximately 8 - 10 minutes. Add remaining ingredien
ts and simmer 15 - 20 minutes or pour into a slow cooker, set on low a
nd cook 45 minutes. Great made a day ahead!
Serve with shredded cheese and tortilla chips if desired.
