Ingredients

3 lbs. boneless skinless chicken breast, cut into pieces

1 container (32 oz.) low sodium chicken broth

1 onion, diced

4 carrots, cut into 2-inch pieces

2 cloves garlic, sliced

4 parsnips, peeled & cut into 2-inch pieces

2 stalks celery, cut into 2-inch pieces

1 c. frozen peas

1 c. frozen corn

1 bay leaf

1 tsp. dried thyme

Directions


Combine all ingredients in a slow cooker. Set heat to Medium and cook
for 8 hours or until chicken is cooked thoroughly.
