Pasta with Roasted Cauliflower and Smoked Almonds
3/4 box (13.5 oz.) whole wheat spaghetti
1 head cauliflower, chopped
2 Tbsp. olive oil
1 clove garlic, chopped
1/2 tsp. dried sage
1/4 c. parmesan cheese
1/4 c. smoked almonds
Preheat oven to 400°F. Bring a large stock pot of water to a boil
and cook pasta according to package directions.
Toss cauliflower with olive oil, chopped garlic and sage, and place on
a foiled lined sheet pan. Bake 20 minutes or until thoroughly browned
In a large bowl combine cauliflower with pasta. Add cheese and smoked
almonds. Toss and serve.
