Spinach Fettuccine Alfredo

2 c. low fat milk

3 oz. low fat cream cheese

3 Tbsp. all purpose flour

1 tsp. salt

3 cloves garlic, crushed

2 c. baby spinach, chopped

1/3 c. parmesan cheese

1 pkg. (12 oz.) 100% whole wheat fettuccine, cooked


Place milk, Neufchâtel cheese, flour, and salt in a blender and
blend until completely smooth.
Melt butter in a non-stick saucepan over Medium-High heat. Add garlic
and cook approximately 30 seconds.
Add in milk mixture and cook 3 to 4 minutes, stirring constantly until
sauce comes to a low simmer. Add chopped spinach and cook an addition
al 2 minutes. Sauce should be thickened.
Remove from heat and stir in Parmesan cheese. Cover and let it stand 1
0 minutes before serving over cooked fettuccine.
