Sirloin Stroganoff

1 Tbsp. olive oil

1 lb. prime sirloin steak, cut into 1 inch pieces

1 pkg. pre-sliced mushrooms, assorted

1 can sodium-free beef stock

2 Tbsp. garlic, minced

1 tsp. smoked paprika

2 c. flat egg noodles, cooked

1/2 c. nonfat greek yogurt

1 tsp. thyme, dried

1 tsp. black pepper

2 Tbsp. flour


Heat oil in large sauté pan over high heat. Season the beef gen
erously with paprika, thyme, and pepper.
Reduce heat and to Medium-High heat and add in garlic and pre-sliced m
ushrooms. Cook an additional 5 minutes or until beef and mushrooms hav
e browned well.
Sprinkle the mushrooms and beef with flour and stir until flour is com
bined. Slowly add in the beef broth in and bring up to a simmer until
sauce thickens.
Remove from the heat and stir in Greek yogurt. Serve over noodles.
