Herb Roasted Pork Loin

Ingredients

2 lb. pork loin, cleaned & trimmed

1/2 tsp. salt

1 Tbsp. olive oil

1 tsp. dijon mustard

2 cloves garlic, minced

1 tsp. dried thyme

1 tsp. dried rosemary

1 tsp. dried basil

1 1/2 c. Central Market Quick Cook Grains Barley, Lentils & Split Peas

, cooked according to directions

Directions


Preheat oven to 475°F.
Place pork loin on a foil lined sheet pan. Combine all other ingredien
ts in a small bowl. Spread mixture over pork.
Roast 10 minutes, reduce temperature to 400°F and roast an additio
nal 30 minutes or until internal temperature reaches 155°F. Rest 1
5 minutes before slicing.
Serve with the Central Market Quick Cook Grains Barley, Lentils & Spli
t Peas.
