Cilantro Chicken With Black Beans & Mango Salsa

Ingredients

2 mangos, peeled & diced

1 lime, juiced

1/2 cucumber, peeled, seeded, and diced

2 Tbsp. honey

1/2 red onion, diced

1 jalapeno, diced

1 Tbsp. chopped garlic

3 Tbsp. chopped cilantro

1/2 tsp. each salt & pepper

2 Tbsp. canola oil

4 (6 oz.) boneless skinless chicken breasts

1 can (15 oz.) H-E-B Black Beans

Directions


Make salsa in a medium bowl: combine mango, lime juice, cucumber, hone
y, red onion and jalapeño. Set aside.
Preheat grill to Medium-High. In a medium bowl combine garlic, cilant
ro, salt, pepper, and canola oil. Add chicken and turn to coat.
Grill chicken 7 minutes per side flipping once.
Heat beans and spoon onto a plate. Top with grilled chicken and mango
salsa.
