Beef Stew with Tomatoes, Potatoes & Oregano

Ingredients

2 Tbsp. canola oil

1 1/2 lbs. beef stew meat, into 1/2-inch cubes

1 onion, coarsely chopped

1 Tbsp. chopped garlic

1 1/2 c. H-E-B No Salt Added Plum Tomatoes

1 ctn. (16 oz.) Central Market Organics Low Sodium Beef Broth

1 potato, quartered

1 bag (16 oz.) frozen mixed vegetables

* salt and pepper

1/2 baguette (optional)

Directions


In a soup pot bring oil to a High heat. Add beef and cook 5 minutes, s
tirring frequently. Add onion and garlic; cook an additional 10 minut
es.
Add tomatoes, beef broth, potatoes, frozen vegetables, salt and pepper
. Bring to a boil, reduce heat to Medium-Low, cover and cook 30 minute
s or until potatoes are done.
