2 Tbsp. olive oil
1 1/2 lbs. boneless, skinless chicken breasts, cut into tenders
1 c. each broccoli, bell pepper and onion, raw and chopped
1 btl. (15 oz.) Robert's Reserve Plum Thai Garlic Sauce
1/2 c. apple cider vinegar
1 bunch fresh mint, chopped
1/2 c. unsalted peanuts, chopped
Bring a large skillet to Medium-High heat; add oil. Brown chicken appr
oximately 5 minutes on each side.
Add mixed vegetables, plum sauce and vinegar; simmer 3 minutes.
Remove from heat and garnish with fresh mint and nuts.
