Cranberry and Walnut Pork Roast

Ingredients

• non-stick cooking spray

1/2 c. H-E-B Whipped Low Fat Cream Cheese

1/4 c. H-E-B Dried Cranberries

1/4 c. walnut pieces

4 pork top round Milanesa cutlets

* ground black pepper

* H-E-B More Fruit Raspberry Fruit Spread

Directions


Preheat oven to 350°F. Heat a large oven-safe skillet over Medium
heat and spray with non-stick cooking spray.
While pan heats, mix cream cheese, dried cranberries, and walnuts in a
small mixing bowl. Divide into four portions and set aside.
Season both sides of pork cutlets with pepper. Smear 1 side of each cu
tlet with a portion of cream cheese mixture and roll into a pinwheel.
Set seam-side down in hot skillet and sear 2 minutes. Place skillet in
hot oven 5 minutes, or until internal temperature of pork reaches 145
°F. Top with raspberry fruit spread, if desired.
