Cranberry and Walnut Pork Roast
• non-stick cooking spray
1/2 c. H-E-B Whipped Low Fat Cream Cheese
1/4 c. H-E-B Dried Cranberries
1/4 c. walnut pieces
4 pork top round Milanesa cutlets
* ground black pepper
* H-E-B More Fruit Raspberry Fruit Spread
Preheat oven to 350°F. Heat a large
oven-safe skillet over Medium
spray with non-stick cooking spray.
While pan heats, mix cream cheese,
dried cranberries, and walnuts in
small mixing bowl. Divide into
four portions and set aside.
Season both sides of pork cutlets
with pepper. Smear 1 side of each
tlet with a portion of cream cheese
mixture and roll into a pinwheel.
Set seam-side down in hot skillet
and sear 2 minutes. Place skillet in
hot oven 5 minutes, or until internal
temperature of pork reaches 145
with raspberry fruit spread, if desired.
