Ingredients

1/2 lb. (8 oz.) Central Market Organics Whole Wheat Gemelli Pasta

1 Tbsp. H-E-B Extra Virgin Olive Oil

1 small onion, diced

1 c. H-E-B Frozen Peas & Carrots

1 pkg. (15 oz.) soft tofu, drained

∗ salt, to taste

1/2 tsp. ground black pepper

1/4 c. H-E-B 100% Grated Parmesan Cheese

1/4 tsp. garlic powder

1 pkg. (4 oz.) H-E-B Fat Free Cream Cheese

Directions


In a large pot bring 2 quarts of water to a boil. Stir in pasta and co
ok 10 minutes or until pasta has reached desired doneness.
While pasta is cooking, heat a large skillet with olive oil and saut&e
acute; onion until tender.
Drain pasta and add to skillet. Toss to combine onions; add peas and c
arrots.
While peas and carrots warm through, place tofu, salt, pepper, Parmesa
n, and garlic powder in a food processor or blender and process until
smooth.
Once peas and carrots have cooked, add cream cheese to skillet and tos
s until melted. Add tofu mixture and combine well. Allow to thicken 2
- 3 minutes and serve.
