Pesto Pasta Primavera

1 pkg (16oz.) Central Market Whole Wheat Penne Pasta

2 tsp. H-E-B Extra Virgin Olive Oil

1 c. zuchinni, sliced thin

1 c. mushrooms, sliced

1/2 c. H-E-B Sundried Tomatoes, packed in oil, cut in half

1/2 c. H-E-B Kalamata Olives, sliced (optional)

1/4 c. H-E-B Basil Pesto

1/4 c. H-E-B Parmesean Cheese, shredded

2 Tbsp. parsley, optional garnish


Cook pasta according to directions on package.
Meanwhile, coat a skillet with oil and sauté zucchini and mushr
ooms over medium heat until tender. Add the tomatoes and olives.
When pasta is al dente, drain and transfer to the skillet with the veg
gies. Add the pesto and toss until all ingredients are well mixed and
heated through.
Remove from heat. Plate and garnish with cheese and parsley. Serve wit
h fresh salad, if desired.
