Cheesy Paprika Puffs

1 c. (2 sticks) butter

2 tsp. sugar

2 tsp. salt

1/4 tsp. cayenne pepper

2 - 2 1/2 c. all-purpose flour

2 c. shredded sharp cheddar cheese

6 eggs

Preheat oven to 400°F. Line a baking sheet with parchment paper. S
et aside.
In a large saucepan, combine butter, 2 cups water, sugar, salt and cay
enne. Heat on mdium-high until butter melts. Add 2 cups flour all at
once. Reduce heat and stir constantly with a wooden spoon, about 1 m
Pour into mixing bowl; using a mixer with a paddle attachment beat 1 m
inute at medium-low to cool mixture. Increase speed to medium; add eg
gs one at a time, beating to incorporate before adding the next. Batte
r should be firm, not runny. If necessary, blend in an additional 1/2
cup flour. Fold in cheese.
Drop table spoonfuls of dough on prepared baking sheet. Sprinkle with
Bake 10 minutes, turn pan, and bake 10 more minutes. Leftover puffs c
an be frozen.
