Red Mashed Potatoes with Greek Yogurt
2 lb. small red potatoes, cubed
1/4 c. butter
1/2 c. skim milk
1/4 c. nonfat greek yogurt
• salt and pepper
Bring a large pot of water to boil. Add a pinch of salt and potatoes.
Cook 10 minutes or until tender, but still firm. Drain potatoes.
Mix butter, skim milk, and yogurt; combine with potatoes.
Mash together until smooth and creamy. Add salt and pepper to taste.
