2 pads fresh nopales (cactus leaves)
1/2 medium onion, chopped
1 bell pepper, chopped
2 jalapeños, seeded & chopped
1 poblano pepper, seeded & chopped
1/4 c. cilantro, chopped
1 firm Roma tomato, chopped
2 limes, each cut into 8 wedges
Cut nopales into 1/4 inch cubes, set on a paper towel 10 minutes.
Combine all ingredients in a large serving bowl and stir. Season to ta
ste with salt and pepper.
Chill until ready to serve. Serve with a piece of lime.
