1 1/2 - 2 lb. H-E-B Natural Angus Beef Skirt Steak
1 c. Cookwell & Co. Pecos 83 BBQ Marinade
3 Tbsp. Adams Reserve Southwest, Val Verde or Smoked Hickory Rub
2 limes, for juice, halved
• H-E-B Flour Tortillas, variety of your choice
• suggested toppings: fresh pico de gallo, guacamole and shredde
Lay beef on a baking sheet or clean surface. Drizzle Pecos 83 Marinade
over beef. Let stand 15 or 20 minutes.
Shake beef to remove excess marinade and season with Adams Reserve Rub
of your choice.
Grill beef according to time and temperature directions on package; co
ok to desired degree of doneness. Remove from grill and squeeze fresh
limes over beef; set aside 5 minutes.
Slice beef thinly, across the grain; serve in hot flour tortillas with
toppings of your choice.
