Ingredients

2 Tbsp. H-E-B Canola Oil

1 c. H-E-B 100% Whole Grain Brown Rice

1/2 c. onion, chopped

3 cloves garlic, minced

1 lb. chicken tenders, chopped

1 c. tomato, chopped

1 tsp. cumin

1 tsp. oregano

1/2 tsp. salt and pepper

3 c. chicken broth

Directions


Heat oil in a heavy bottom skillet on medium high heat. Stir in rice,
onion, and garlic. Cook 4 minutes.
Place chicken on top of rice. Add tomatoes, cumin, oregano, salt, pepp
er and chicken broth. Bring to a boil. Cover, reduce heat, and cook 20
minutes or until rice and chicken are cooked.
