Sweet & Spicy Mandarin Stir-Fry
2 c. H-E-B 100% Whole Wheat Brown Rice
1 lb. chicken tenders, cut into 1 inch cubes
1/4 c. cornstarch
1 can (11 oz.) Hill Country Fare Mandarin Oranges
2 Tbsp. lite soy sauce
1 Tbsp. balsamic vinegar
1 Tbsp. sesame oil
1 Tbsp. red pepper flakes
2 tsp. ground ginger
2 pkgs. Mann's Vegetable Medley
Prepare rice as directed on the package.
Meanwhile, seal chicken and cornstarch in a zipper bag. Toss to coat.
Heat a heavy bottom skillet on medium high heat. Stir in oranges, soy
sauce, balsamic vinegar, sesame oil, pepper flakes and ginger. Bring t
o a boil and add chicken.
Reduce heat to medium and stir-fry 10 minutes. Add vegetables and stir
-fry 5-7 more minutes or until chicken is cooked and vegetables are te
