Chicken Salad with Grapes & Apples
1 tsp. H-E-B Canola Oil
1 lb. ground chicken
1/4 c. onion, chopped
1 c. H-E-B Ready, Fresh, Go! Spinach, chopped
1 celery stalk, chopped
2 c. grapes, sliced in halves
1 medium apple, chopped
1/3 c. low-fat mayonaise
• salt & pepper

Heat a heavy bottom skillet over medium high heat 3 minutes. Add oil a
nd ground chicken. Cook 15 minutes or until internal temperature is 16
5°F. Set aside and let cool.
Meanwhile, combine onion, spinach, celery, grapes, apple and mayonnais
e in large serving bowl. Stir in cooked chicken and season to taste wi
th salt and pepper.
Serve on a whole wheat bun.
