4 medium size Rio Red Grapefruit (about 4 c.)
2 containers (6 oz. each) H-E-B Fat Free Blended Lemon Yogurt
1/3 c. 0 calorie sweetener
8 fresh mint leaves
8 H-E-B Maraschino Cherries, drained
Peel grapefruit with knife. Use paring knife to separate each grapefru
it segment from membrane. Place segments on sheet pan, cover with plas
freeze 30 minutes.
Combine frozen grapefruit segments, yogurt and sweetener in food proce
ssor bowl; process 30 seconds or until smooth and creamy. Scoop into s
freeze until ready to serve. Garnish with a mint leaf a
nd cherry before serving.
