Thin Crust Spinach & Feta Pizza

1 H-E-B Whole Wheat 12" Pizza Crust

1/4 c. H-E-B Pizza Sauce

1 c. H-E-B Reduced Fat Crumbled Feta Cheese

1 Tbsp. H-E-B Extra Virgin Olive Oil

1 bag (9 oz.) Fresh Express Spinach, thin sliced

2 c. mushrooms, thin sliced

1 c. red onion, chopped

1/2 tsp. crushed red pepper (optional)

1 tsp. Italian seasoning blend


Heat oven to 425°F. Line a large baking sheet with foil, set aside
. Place pizza crust on prepared baking sheet.
Spread crust with 1/4 cup pizza sauce. Sprinkle with 1/2 cup feta chee
se and set aside.
Combine olive oil, thin sliced spinach, mushrooms, red onion and crush
ed red pepper, if desired, in large microwave safe bowl. Cover with pl
astic wrap, microwave on high power 1 minute, stir and microwave 1 mor
e minute.
Spread spinach mixture over feta cheese, and sprinkle with remaining f
eta cheese and Italian seasoning.
Bake on bottom oven rack 8 minutes or until cheese melts and begins to
turn golden.
