2 Tbsp. H-E-B Olive Oil

2 ruby grapefruits, peeled & sectioned with juice

1 avocado, peeled & sliced

1 pkg. (9 oz.) Fresh Express Spinach

2 thin slices red onion, rings separated

1 container (12 oz.) H-E-B Fully Cooked Shredded Chicken


Combine olive oil, grapefruit sections with their juice and avocado sl
ices in a large salad bowl. Toss gently to coat.
Top grapefruit mixture with baby spinach, red onions and shredded chic
ken. Cover with plastic wrap and chill for 30 minutes or more. Toss be
fore serving.
