1 lb. ground beef
1/4 c. dry bread crumbs
1/2 tsp. hot sauce
3 green onions, chopped
1 1/2 Tbsp. Tony Chachere's or Zatarain's Cajun seasoning, divided
1/2 Tbsp. Creole mustard
1 Tbsp. vegetable oil (for grill or skillet method)
4 slices cheddar cheese
4 hamburger buns or individual ciabatta rolls
Preheat grill or skillet over high heat.
In a medium bowl, mix ground beef, bread crumbs,
egg, hot sauce, Worce
stershire, green onions,
1/2 Tablespoon Tony Chachere's or Zatarain's
Seasoning, and mustard. Form into 4 patties.
Sprinkle both sides of each patty evenly with
remaining 1 Tablespoon o
f Tony Chachere's or
Zatarain's Cajun Seasoning.
For the grill: Lightly oil grill grate, and cook
patties over high hea
t 1 minute per side to achieve
blackened look. Lower heat and finish c
4 minutes per side.
For the skillet: Add oil to pan and swirl to coat
bottom of pan. When
oil just starts to smoke, add
patties, 2 at a time, and cook 1 minute
per side to
achieve blackened look. Turn heat to medium and
ooking 4 minutes per side until cooked
through. (Hint: Use 2 pans to g
et all burgers done
at same time.)
Place 1 slice cheese on each burger, and allow to melt.

sauces, and a side of fried okra!
