Speedy Bacon & Asparagus Bake
Ingredients
4 H-E-B Whole Wheat or 7 Grain Tortillas
4 H-E-B Large Eggs
1 c. H-E-B Fat Free Half & Half
1 c. H-E-B Reduced Fat Shredded Monterey Jack Cheese
1/2 tsp. crushed red pepper (optional)
8 slices H-E-B Fully Cooked Bacon
1 bag (16 oz.) H-E-B Cut Asparagus, thawed
Directions
Spray each tortilla with nonstick canola spray and place it in a micro
wave-safe bowl.
Combine eggs, half-and-half, 1/2 cup cheese, and red pepper in a mixin
g bowl. Beat with an electric mixer 30 seconds. Pour 3/4 cup egg mixtu
re in each tortilla and set aside.
Heat bacon according to package directions. Crumble 2 slices bacon in
each tortilla. Top with 1/3 cup asparagus and 2 tablespoons remaining
cheese. Cover loosely with plastic wrap. Microwave each on high power
2 minutes or until egg
is cooked to desired degree of doneness.
