Grilled Tomatillo & Serrano Salsa

• grilling mesh

1 lb. medium tomatillos, husks removed

1 serrano pepper

4 large garlic cloves

1 small onion, peeled and cut into wedges

1/4 c. H-E-B Olive Oil

• salt and pepper

1/3 c. loosely packed chopped cilantro leaves

1 tsp. sugar


Heat gas or charcoal grill to high heat (400ºF). Line baking sheet wit
h foil, place grilling mesh over foil, spray with no-stick spray and s
et aside. 2. Combine tomatillos, pepper, garlic, onion and olive oil i
n bowl and toss to coat. Season to taste with salt and pepper. Place s
easoned vegetable mixture on prepared grilling mesh. 3. Place vegetabl
es and grilling mesh on grill, close lid and grill for 10 minutes or u
ntil skins blacken, turning vegetables over once during grilling. 4. R
emove from grill and cool. Remove pepper stem. Place grilled vegetable
s in blender or food processor bowl and process 30 seconds. Add cilant
ro and sugar and process 30 more seconds. Season to taste with salt an
d pepper.
